Delectable Dragon Fruit Cake

 

 

About the Recipe

The tropical fruit dragon fruit, also called strawberry pears or pitahaya, has a variety of wellness advantages. A dessert made from dragon fruit is adorned to look like a freshly plucked dragon fruit. Utilizing Oddy Ecobake, which enables you to bake a non-sticky cake, the cake is baked wonderfully spongy and soft, and demolding it was made incredibly easy.

Ingredients

 

  • Dragon fruit-1 & Sugar-3 tbsp
  • Oil-3 tbsp & Powdered sugar- 5 tbsp
  • All-purpose flour-1 cup & Milk powder- 2 tbsp
  • Corn flour-1 tbsp & Baking powder-1 tsp
  • Baking soda- ½ tsp & Vanilla essence -2 drops
  • Pink gel food colour-2 drops & Vinegar- ¼ tsp
  • Whipping cream-200 ml & Cherry crush & Melted chocolate
  • Oddy Ecobake

Directions

 

 

  • Grind the pulp of dragon fruit with sugar in a mixer jar. Strain the juice into a bowl. Take one-fourth cup of dragon fruit juice, add oil and powdered sugar to it, and mix well.
  • Then add the sifted dry ingredients to it and mix well, adding the remaining dragon fruit juice and vinegar to make a smooth batter.
  • Line a baking pan with Oddy Ecobake. Transfer the batter to it, spread it out, and tap it well. Bake the cake for 20–25 minutes at 180 degrees Celsius. Cool completely and demold.
  • Divide the cake into three layers. Beat whipping cream in a stand mixer until stiff peaks form. Apply whipping cream to the cake board and place a layer of cake.
  • Soak it with cherry juice mixed with water; apply whipping cream and cherry juice to it; and spread a few pieces of dragon fruit on it. Repeat the process for other layers, too. Frost the cake with cream and smooth using a spatula.
  • Make cuts on the cake as shown and cream coat the cake. Spread cream and smooth using a scrapper. Mix a few drops of pink gel food colour into the whipping cream to make pink cream.
  • Apply pink cream to the cake and spread as shown. Melt chocolate to make ganache, and garnish the cake as shown. Garnish with pink cream filled in a piping bag as shown.
  • Decorate with green cream as shown. Place a tag of your choice. The delicious dragon fruit cake is ready.
