Healthy Wheat Jaggery Vanilla Cake

The crushed almonds and other seeds give this Atta jaggery cake the ideal texture, making it the ideal dessert to prepare on a relaxing evening. Brown Ecobake cooking paper makes it easier to demould your cake without the additional cleanup and helps you get the ideal shape.

Ingredients

 

  • Atta or whole wheat flour- 1 cup & Jaggery or gud- 90g
  • Refined oil- 1/4 cup & Hot water- 1/2 cup + 4tbsp
  • Milk Powder- 4 tbsp & Vanilla essence- 1/2 tsp
  • Baking powder- 1 tsp & Baking soda- 1/4tsp
  • Salt- 1/4tsp, Vinegar- 1 tsp & Mixed seeds for garnishing

Directions

 

  • Dissolve chopped jaggery pieces in hot water and strain impurities from them after cooling the jaggery solution. Add oil to the jaggery solution and mix well.
  • Sieve the dry ingredients into the jajjery oil mixture and mix well to prepare the batter. Add water to the cake batter to adjust its consistency.
  • Transfer the batter to a cake tin lined with brown Ecobake cooking paper. Spread mixed seeds on the cake batter.
  • Bake the cake for 30 minutes in a preheated kadai. Once the cake is baked and cooled, demould it and cut the atta jaggery cake into small pieces.
