Make Soan Papdi At Home

Ingredients

 

  • 2 tbsp Gram flour (besan)
  • 2 tbsp ghee
  • 1/2 cup Water
  • Chopped Almonds
  • 2 cups maida
  • 2 cups sugar

Directions

 

  • Take a heavy bottom pan and add 2 tbsp of ghee. To this, add refined flour and mix till there are no lumps. Then add 2 tbsp of gram flour and roast it until it becomes aromatic. Switch off the flame and transfer this mix onto a plate through a sieve.
  • In a non-stick pan, add 2 cups of sugar, 1/2 cup of water, and a few drops of lemon juice. Cook on a low to medium flame until the sugar melts completely. Add a few drops of sugar syrup to a water bowl at different stages to check for hard ball consistency as shown in the video.
  • Once the sugar syrup comes to the desired consistency, transfer it to Ecobake cooking paper. Stir the sugar syrup to reduce its temperature. Now stretch the sugar syrup and fold it. Repeat this step for at least 2 minutes.
  • Now place this ball on the maida and gram flour mixture. Stretch and fold the sugar ball until its completely coated with the mixture. As a result a number of threads will be formed. 
  • To give shape to the soan papdi you can add chopped almonds and layers of threads in an empty paper cup. Gently flip this into a serving plate and repeat the process.
