Mango Cake

About the Recipe

Make this delicious eggless Mango cake without Baking, in just 10 minutes. It is extremely soft, spongy and juicy and can be made easily at the comfort of your home.

Ingredients

 

  • 2 cup Mangoes
  • 3 tbsp sugar
  • 5 tbsp refined oil
  • 1/2 cup + 2 tbsp powdered sugar
  • 1/3 cup curd
  • 1 tsp vanilla/mango essence
  • 1 cup + 2 tbspmilk
  • 1+1/4 cup maida
  • 2 tbsp milk powder
  • 1+1/4tsp baking powder & 1/2 tsp baking soda
  • 2 pinches of salt
  • 1/2 cup white chocolate

Directions

 

  • Cut 2 cup mangoes into cubes and put in mixer and make into a paste.
  • Add the paste to a pan and add 1/2 cup + 2 tbsp sugar and 3 tbsp water and mix well on high flame till it thickens and becomes mango glaze.
  • Sieve and add the mango glaze to a bowl and keep aside.
  • Take a 9.5 inch non stick pan. ( If not available, Heat another pan on the gas and heat it at low flame for 5 minutes. Keep the non stick pan on top of this to make the cake.)
  • Line the non stick pan with Oddy ecobake baking and cooking paper.
  • To a bowl , add 5 tbsp refined oil, 1/2 cup + 2 tbsp powdered sugar , 1/3 cup curd, 1 tsp vanilla/mango essence, 1/2 cup milk and mix well. Then add 4tbsp mango glaze to this batter.
  • Sieve and add 1+1/4 cup maida, 2 tbsp milk powder, 1+1/4tsp baking powder, 1/2 tsp baking soda, 2 Pinch of salt and mix well. (Mix milk if batter is too thick)
  • Pour this batter in the pan, cover lid and bake at low flame for 12-14 minutes.
  • In another bowl, add 1/2 cup milk, 1 tbsp sugar and 1 tbsp mango glaze to make mango milk
  • Make pricks on the cake and pour the mango milk over the sponge cake and keep in fridge. For decoration, add 1/2 cup white chocolate and 2 tbsp milk and let it melt well.
  • Pour the rest of the mango glaze over the cake and spread evenly. Frost the cake using the white chocolate ganache and decorate using cherries and silver sugar balls.
