Mocha Belgium Chocolate Cake is a super delicious and yummiest cake that melts in your mouth as soon as you have a bite. A combination of coffee and chocolate is too hard to relish. For baking the chocolate sponge cake, you can use Oddy Ecobake cooking paper circles. It is easy, safe, and convenient to use. It comes in pre-cut sizes.

Ingredients

 

  • 300 grams dark chocolate compound
  • 150 grams whipping cream
  • Irish coffee essence Alternative -normal coffee essence or 1 tsp coffee powder mixed with lukewarm milk.
  • 1 Chocolate sponge cake
  • White chocolate ganashe
  • edible decorative sprinklers

Directions

 

  • In a bowl, take 300 grams chocolate and melt it. Add 150 grams of whipped cream at room temperature. Give it a nice mix. Microwave it for few seconds and mix it well again.
  • Add to it Irish coffee essence. As an option you can take 1 tsp coffee in lukewarm milk and add it. Mix well so that no lumps are formed. It should have a nice smooth and runny consistency.
  • Now take two layers of chocolate cake sponge. Add a thin layer of the chocolate ganashe. If the sponge cake is dry you can moisten it with water, if it is nice and soft then avoid applying water.
  • Place another layer and cover it with ganashe. Then refrigerate it for 15 to 20 mins. Then again add another layer of chocolate ganashe and with the help of a pallette knife smoothen and level the cake. Make sure the layer of ganashe is thin.
  • After two coats of ganashe, add a liquidy layer again. To make it more liquid, add a little milk and mix well. Keep the finishing nice and clean.
  • If the chocolate thickens, then heat the pallette knife and smoothen the edges and sides with the hot knife. Now add a final layer of runny ganashe all over the cake. With a help of a scrapper, give a clean finishing on the sides.
  • Now for designing, take a milk chocolate ganashe in a pipping bag and give the cake soft frill like design. Keeping the design simple gives it a nice look. For toppings add some edible heart shaped sprinklers.
