Vrat Special Rajgira Masala Puri

Navrati Special Rajgira Masala Puri recipe is crispy and tasty to eat during fasts. It can be eaten as a side dish with chutney or curd. Easy to prepare and goes well with a hot cup of tea. It can easily be stored for 2 to 3 days. For easy and perfect round puris try Oddy Ecobake nonstick lining papers. No need to roll by hand or dry flour.

Ingredients

 

  • 2 cups Rajgira Flour
  • 2 Boiled Potatoes
  • Fresh Coriander leaves
  • 1 tsp cumin & 1 tsp red chilli powder
  • Salt & Oil

Directions

 

  • Grate boiled potatoes and add to it chopped fresh coriander leaves, 1 tsp roasted cumin seeds (slightly crushed), 1 tsp red chilli powder (optional is finely chopped green chillies) and rock salt.
  • Mix all ingredients together and knead into soft potato dough. Then add the Rajgira flour and kneed again by adding required water.
  • Avoid adding water in the beginning, as the potatoes contain water. Lastly add 1 tsp oil and kneed again.
  • Roll out the puris immediately. No need to let the puri dough rest. Roll out puris to fry.
  • One easy trick to roll perfect puris is by using Oddy Ecobake non stick liners. Just place one dough ball in the paper liner, place another paper above it and using a plat, flaten the dough. Perfect round puri ready to fry.
  • Deep fry all the puris on high to medium flame and have with chutney or tea. One trick to have less oil on the puris is to add a pinch of salt in the oil before frying.
