Ingredients

  • 1/2 tsp ghee & 1 tsp poppy seeds
  • 1 cup grated fresh coconut
  • 1 tbsp dry fruits & 1/3rd cup jaggery
  • 1/4 tsp cardamom & 1/8 tsp nutmeg
  • 1 cup water & 1/3 tsp ghee
  • A pinch of salt & 1 cup rice flour

Directions

  • Prepare the filling by adding ghee, poppy seeds, grated fresh coconut, dry fruits, jaggery, cardamom, and nutmeg to a pan and stirring well. Cook until the moisture from the mixture is completely dried. Let the filling cool for some time.
  • Meanwhile, prepare the dough by boiling water in a pan and adding a pinch of salt and ghee to the boiling water. Once the bubbles start appearing in the water, add the rice flour to the pan. Mix until the water is completely absorbed by the rice flour. For a while, switch off the stove and cover the pan with a lid.
  • After the dough has cooled a bit, start kneading it until it is smooth with no cracks in it. Take a small portion of the dough, roll it into a smooth ball, flatten it, and place the filling on it. Make modaks of desired shapes with or without using moulds.
  • Place modaks on a steaming plate, line it with an Ecobake non-sticky liner, place modaks on the liner, and steam them for 15 minutes. Once the modaks are completely cooked, transfer them to a plate and garnish them with ghee and kesari.
