Bakery Style Eggless Ras Malai Cake Without Oven Or Premix

Try this bakery style eggless ras malai cake without the oven. You can make this cake with store-bought angoori ras malai or home-made ras malai. Ecobake helps in getting the perfect shape for your cake without any greasing and no need for cleaning afterwards.

Ingredients

 

  • Maida or refined flour- 1 Cup or 150 g
  • Milk- 1/2 cup+ 2 tbsp & Powdered Sugar- 1/2 cup+ 1/4cup
  • Milk powder- 1/4 cup & Refined oil- 1/4 cup
  • Baking powder- 1 tsp & Baking soda- 1/4 tsp
  • Vinegar- 1 tsp & Salt- 14 tsp
  • Ras malai Essence- 1/2 tsp & Yellow food colour- 3-4 drops
  • For Frosting Cream
  • Chilled whipping cream- 1 cup & Yellow gel food colour- 2 drops
  • Rasmalai Essence- 5-6 drops & Angoori Rasmalai- 250g
  • Chopped dryfruits and Rose petals for garnishing

Directions

 

  • In a bowl, add powdered sugar and all the wet ingredients together and combine well. Add the dry ingredients one-by-one to the bowl and mix well to prepare the cake batter.
  • Add 2 drops of liquid yellow food colouring to the cake batter with 2 tbsp of milk and combine well. Take a 6 inch cake mould and line it with Ecobake cooking paper. Transfer the batter to the cake mould.
  • Place a kadai on the stove and pre-heat it for 5 minutes on medium heat. Keep a stand in the kadai and place the cake mould on it. Bake the cake for 35 to 40 minutes. If you are using an oven, bake the cake for 30 to 35 minutes at 180 °C.
  • Switch off the stove once the skewer comes out clean and let the cake cool down. Divide the cake into 4 equal parts before frosting. Take 1 cup of chilled whip cream and beat it with an electric beater until stiff peaks are formed. Add yellow gel food colouring to it.
  • Add 2 drops of liquid yellow food colouring to the cake batter with 2 tbsp of milk and combine well. Take a 6 inch cake mould and line it with Ecobake cooking paper. Transfer the batter to the cake mould.
  • Soak the cake with angoori rasm alai milk and rasm malai chunks. Spread a generous amount of whipped cream on the cake. Keep repeating the same for the remaining layers of the cake.
  • Add dollops of cream to the fourth layer of the cake and apply it uniformly all over the cake. Take a piping bag with a star nozzle and fill it with the remaining cream.
  • Decorate the cake by making small flowers on the cake using the nozzle. Place the ras malai chunks on the flowers on the cake. Garnish the cake with chopped almonds and pistachios.
