Crispy and Crunchy Chirote Recipe

About the Recipe

Chirote is a special crunchy and crispy recipe from Karnataka and Maharashtra. This recipe requires very few ingredients and is super easy to prepare. Try this recipe on occasions or on festive days. This can be made and stored in an air-tight container for 15-20 days. For storing food try Oddy Uniwraps, it is safe, convenient, better than aluminum foil, and keeps food fresh for longer days.

Ingredients

 

  • 500 grams Maida
  • ½ cup ghee
  • Salt as per taste
  • ½ cup corn flour
  • oil for frying

Directions

 

  • Take maida and salt in a parat or flat bottom plate. Mix it well. Add melted ghee and mix till the mixture comes to a binding texture.
  • Now kneed a dough by gradually adding water. Cover and set aside for 30 minutes. After 30 minutes, kneed again.
  • Divide the dough into 6 equal portions and shape each portion into a ball and press it lightly. Then take 3 different colors (kesari, pink and green) and mix into 3 balls.
  • Three dough balls will be colored and three plain. Now roll out the balls into thin chapati.
  • Make a paste, take ghee in a bowl and mix till it is smooth. Add corn flour in batches and mix till a smooth thick paste is formed.
  • Place one chapati roll (yellow) and spread the ghee cornflour past and roll it and keep aside. Then take another chapati (pink), roll it into a chapati, spread the ghee corn flour paste and place the earlier yellow roll on it and make a roll with help of hands.
  • Repeat this steps with remaining dough balls. Keep alternating the colored chapaties. First yellow, pink, plain, green and last two plain dough.
  • Now after a layers are done, lengthen it by gently and rolling it into a cylinder. Cut it into 1 inch pieces. Roll out each peience into a small disc.
  • Heat sufficient oil in a kadai. Deep fry the small discs, a few at a time, till light golden brown and crisp. Sprinkle powdered sugar with the help of a strainer on the fried chirote.
