Ingredients

  • 1 cup (130gms) maida & 1/4 cup (35gms) cocoa powder
  • ½ tsp (3gms) baking soda & 1 tsp (4gms) baking powder
  • 1/4 cup (60ml) vegetable oil & 1/2 cup + 2 tbsp powdered sugar
  • 1/3 cup (90 gms) curd & 1/3 cup milk
  • 100gms salted butter & 1 cup super fine sugar
  • 3 tbsp cocoa powder & 1 cup (175gms) melted chocolate
  • 1/2 cup (170 ml) cream on room temperature

Directions

  • Mix the wet ingredients for the cake in a mixing bowl. Sieve the dry ingredients into the bowl and mix them with the wet ingredients to prepare the cake batter.
  • Transfer the cake batter into a cake mould lined with brown Ecobake cooking paper circles. Bake the cake for 45 to 50 minutes in a preheated kadai on the stove.
  • Once the cake is baked and cooled, trim the upper part of the cake. Then divide the cake into 3 equal parts. Beat whipping cream in a bowl and beat it until stiff peaks are formed.
  • Prepare the frosting by mixing salted butter, super fine sugar, cocoa powder, melted chocolate, vanilla essence and cream at room temperature.
  • Place the first cake layer on the cake board, soak it with sugar syrup, apply frosting, and spread it uniformly. Now repeat the same process for the second and third layers of the cake.
  • Frost the cake completely with the cream and level it using a card and spatula. Prepare chocolates by pouring melted chocolate into chocolate moulds and drying them.
  • Combine the remaining melted chocolate and fresh cream to make chocolate ganache. Pour this ganache on the cake and make drip designs on the sides of the cake using it. Decorate the cake with chocolates, cream, and cherries as shown.
