Eggless Coconut Cake Recipe Without Oven

This eggless butter coconut cake has a light, fluffy crumb, and a strong coconut flavor. It is incredibly moist. We’ll begin by creaming sugar and softened butter together before incorporating the dry ingredients. With Ecobake cooking paper, you can easily demould your cake and achieve the ideal shape without using any oil.

Ingredients

 

  • 1/4 Cup butter & 3/4 cup powder sugar
  • 1/2 cup curd & 1 cup maida
  • 1 tsp baking powder & 1/2 tsp baking soda
  • 1/2 tsp rose essence (optional) & 1/4 cup milk
  • 1/3 cup desiccated coconut

Directions

 

  • In a bowl, add softened butter and sugar and mix well to get a creamy texture. Add curd to the butter and sugar mixture and combine everything together.
  • Sieve the dry ingredients into the bowl and give them a mix to prepare the cake batter. Add rose essence and milk to the batter to adjust the consistency of the batter.
  • Transfer it to the cake mould lined with Ecobake cooking paper. Garnish with desiccated coconut on the top of the batter.
  • Bake the cake for 30 to 35 minutes on a low flame in a preheated kadai. Once the cake is baked and cooled a bit, demould it and cut into pieces.
