Eggless Tall & Soft Christmas Plum Cake

About the Recipe

Jaggery is used to make this Christmas plum cake. The components are readily available and the recipe is really simple. It is made without an oven and contains no alcohol. Oddy Ecobake helps in getting the perfect shape for your cake without any greasing and no need for cleaning afterward.

Ingredients

 

  • All purpose flour- 1 + 1/4 cup & Refined oil- 1/4 cup
  • Powdered jaggery- 3/4 cup & Milk- 1/2cup+ 1/4 cup+ 3 tbsp
  • Baking powder- 1 tsp & Baking soda- 1/2 tsp
  • Vanilla essence- 1/2 tsp, Vinegar- 1 tsp & Nutmeg - 1 pinch
  • Cinnamon Powder- 1/4tsp & elaichi Powder- 1/4tsp
  • Tutti frutti- 6 tbsp(red, green and yellow 2 tbsp each)
  • Chopped walnuts- 2 tbsp & Chopped cashew nuts- 2 tbsp
  • Chopped almonds- 2 tbsp & Chopped cherries- 2 tbsp
  • Black Raisins- 2 tbsp & Dry Strawberry- 2 tbsp
  • Dry Cranberry- 2 tbsp & Dry raspberry- 2 tbsp
  • Dry Blueberry- 2 tbsp & Oddy Ecobake
  • Some tutti frutti, cherries and cashew for decoration

Directions

 

  • Soak the dried fruits and nuts except cherries in milk for 20 minutes.
  • Add the wet ingredients to a bowl along with the cinnamon powder, grated nutmeg, and vanilla essence.
  • Add the dry ingredients through a sieve to the bowl. Mix them well with soaked nuts and milk to prepare the batter.
  • Transfer the batter to a cake mould lined with Oddy Ecobake. Add a few chopped nuts to the batter.
  • Bake the cake for 45 minutes in a preheated kadai. Once the cake is baked and cooled, demold it.
  • Remove the Oddy Ecobake and cut the cake into pieces to serve.
