Healthy And Delicious Plum Cake

In the US, plum cakes are referred to as “fruit cakes.” One of the decadent and nutritious treats created from dry fruits is plum cake. Despite what the name would suggest, this cake doesn’t actually contain plums; rather, it refers to prunes or raisins. The cake is steamed spongy by using Oddy Ecobake to line your steaming plate, which is practical to use because it can be cut to the proper size and since it is non-stick, it saves you time cleaning it up afterwards.

Ingredients

 

  • Dates-2 tbsp, Raisins-2 tbsp, Plums-2 tbsp, Cranberry-2 tbsp
  • Orange juice-1 cup, Jaggery-3/4 cup, Water-1/2 cup
  • Eggs-2, Wheat flour- 2 cups, Cinnamon powder-1/2 tsp
  • Cardamom powder -1/2 tsp, Cloves powder-1/2 tsp, Vanilla essence-1 tsp
  • Baking powder-1/2 tsp, Baking soda-1/2 tsp, Ghee or butter-2 tbsp
  • Oddy Ecobake

Directions

 

  • Soak dry fruits in orange juice for at least 1 hour. Boil and melt jaggery. Let it cool completely.
  • Now add the melted jaggery syrup by filtering it to the soaked dry fruits. Then add the eggs to a bowl and whisk.
  • Now add spice powders, vanilla essence, and dry nuts to it and mix; then add the sifted flour, baking soda, baking powder, vanilla essence, and ghee to it and mix well.
  • Line a baking pan or steaming plate with Oddy Ecobake. Spoon the batter into it and spread it well. Steam the cake for 10–15 minutes.
  • Remove from the steamer plate and take them to a serving plate. You can also bake it in an oven for 30 minutes at 160 degrees Celsius. The healthy plum cake made in a steamer is ready.
