Ingredients

  • Milk - 3/4 cup + 2 tbsp & Vinegar - 1.5 tbsp
  • Oil - 75 ml & Vanilla essence - 1.25 tsp
  • Sugar - 3/4 cup + 2 tbsp & Maida - 1.25 cup
  • Milk powder - 4 tbsp & Baking soda - 1/4 tsp + few pinches
  • Baking powder - 1.25 tsp & Whipped cream - 1.5 cup
  • Red, Green & Saffron gel food color - few drops
  • Condensed milk & Oddy Ecobake

Directions

  • Prepare buttermilk by mixing milk and vinegar. Add the wet ingredients to the prepared buttermilk and mix well. Sieve the dry ingredients into the same bowl and mix well to prepare the cake batter. Add 2 tbsp of milk to adjust the consistency of the batter.
  • Transfer the cake batter to a cake mould lined with Oddy Ecobake. Bake the cake for 45 minutes in a preheated kadai. Once the cake is baked and cooled, trim the top of the cake and divide it into three equal parts.
  • Beat whipped cream in a bowl until stiff peaks are formed. Place the first layer of the cake, soak it with sugar syrup, and apply whipped cream to it. Add and spread condensed milk over the whipped cream, and place another cake layer on it.
  • Repeat the same process for the remaining cake layers. Crumb-coat the cake with the remaining whipped cream. Make a cut at the centre of the cake with a steel tumbler as shown. Divide the cake into two halves.
  • Remove the cut part at the center. Make the letter S with two halves of the cake by joining them in opposite directions. Place the small halves in the centre at the two ends of the letter "S." Make rosettes with a petal nozzle using pink cream.
  • Make a shell border on the cake with yellow cream using an open star nozzle. Place these rosettes on the cake from the top to the bottom. Make leaves besides the roses with a leaf nozzle. Your "S" letter cake is ready!
