Matar-Paneer-Makhana with chapati | Office tiffin recipe

About the Recipe

Matar-Paneer-Makhana is a nutritious rich curry recipe made with roasted foxnuts  (makhana), cottage cheese (paneer), green peas, and cashew nuts in onion tomato gravy. This makhana sabji recipe goes well with chapatis and is an excellent option for tiffin.

Ingredients

 

  • 1 tsp of mustard oil
  • 1 large onion (diced)
  • 1 inch ginger and 6-7 pods of garlic
  • 200 grams of cottage cheese (diced)
  • Cashews (6-7) and Tomatoes - 2
  • Khada masala like cumin seeds, cinnamon, bay leaf, black cardamom and green cardamom
  • Dry spices -1 tsp coriander power, 1 tsp garam masala, salt to taste, turmeric and red chilly powder
  • Kasuri methi and Kitchen King Masala - 1 tsp
  • Roasted Makhanas

Directions

 

  • In a kadai, add 1 tsp of mustard oil, 1 large onion (diced), 1 inch ginger and 6-7 pods of garlic.
  • Roast all of this together for 4-5 minutes on low flame till it is caramelized or turns brown. Keep this aside now.
  • In the same kadai, add 200 grams of cottage cheese (diced). Saute it for sometime and keep it aside. Now roast some cashews (6-7) and keep this aside as well.
  • For gravy masala, grind 2 tomatoes and roasted onion together.
  • Now add some oil to the kadai and roast the the khada masala in it like cumin seeds, cinnamon, bay leaf, black cardamom and green cardamom.
  • To this, add the tomato-onion paste and cook it for 4-5 minutes on low flame after covering it with a lid.
  • Then add 1 tsp coriander power, 1 tsp garam masala, salt to taste, turmeric and red chilly powder. Don't forget to add a little bit of Kasuri Methi and 1 tsp of Kitchen King Masala.
  • Add boiled peas to the gravy and add water/whey as required. Cook it till a boil comes. Then add roasted paneer and cashews to this.
  • In the end, add roasted makhanas and mix all of this well.
  • Matar-Paneer-Makhana is ready to be packed in tiffin along with chapatis. Pack your food and rotis in Oddy Uniwraps paper foil to keep it hot and fresh.
