Palak Potato Paratha

About the Recipe

Palak potato paratha is a tasty winter breakfast recipe. It is healthy and nutritious. While rolling paratha, use Oddy Ecobake. It is non-sticky and helps smooth the rolling of paratha. Ingredients

 

  • 1 big bunch of Palak (cleaned and washed)
  • pinch of baking soda, handful of fresh coriander leaves,
  • 10-12 green chilies, 2 full garlic cloves,
  • 5-6 pieces ginger (2 inch pieces), 3 cups wheat flour, 2 tsp sugar,
  • ½ + ½ tsp turmeric powder, coriander powder 1 tsp,
  • cumin powder 1 tsp, ajwain 1 tsp, 1 lime juice,
  • 5 boiled and peeled potatoes,
  • ½ tsp mustard seeds, ½ tsp cumin seeds
  • oil & salt as required, Oddy Ecobake, Oddy Uniwraps

Directions

 

  • Take 1 big bunch of Palak (cleaned and washed). Keep water to boil, add a pinch of baking soda, and put the palak in the water.
  • Switch the gas and cover the vessel. Let it simmer in hot water for 3-5 mins. Once done, remove from hot water and allow it to cool.
  • Grind a handful of fresh coriander leaves, 10-12 green chilies, 2 garlic cloves, and 2 inches of ginger. Grind it to a fine paste with little water.
  • After the palak has cooled, grind it to make a puree. Take wheat flour, add sugar, turmeric powder, coriander powder, cumin powder, Ajwain, and lime juice, Mix it.
  • Add 2-3 tsp oil, and half the quantity of the chili, coriander masala, and whole of the palak puree. Mix it and knead a dough.
  • Don’t add additional water to knead the dough. Cover and let it rest. Take 5 boiled and peeled potatoes. Grate the potatoes.
  • Heat a kadhai and add 2-4 tbsp oil. Add mustard seeds and cumin seeds and allow them to crackle. Add the remaining half of the chili coriander masala.
  • Add turmeric powder and salt as required and mix well. Cook till oil leaves the sides. Add the grated potatoes and mix till everything is well blended.
  • Cook for a while and switch the flame and let the bhaji cool. Now take Oddy Ecobake and place it on a rolling pin. It will help in smooth chapati without sticking to the base.
  • Make small dough balls and potato bhaji balls. Take a ball of dough and roll out a small chapati, add a small ball of potato bhaji, close the sides and flatten the dough.
  • Dust some flour and roll out full chapati. Heat the tava, and roast the chapati with ghee or oil on both sides. Serve with ketchup or curd. Or pack it for tiffin in Oddy Uniwraps.
