Simple And Easy Eggless Black Currant Pastry

Ingredients

 

  • For Sponge- All purpose flour- 1 cup, Grinded sugar- 3/5 cup, Oil- 3 tbsp, Baking powder- 1 tsp, Salt-1/4 tsp, Cake gel-1/2 tsp, Blackcurrant Essence- 1/2 tsp and Water- 1/2 cup
  • For Blackcurrant Syrup- Blackcurrant crush- 1 tbsp and Water- 1/4cup
  • For Whipped cream- Chilled non dairy whipping cream- 1 cup, Blackcurrant Crush - 1/4 cup & Cherries and Sprinkles for decoration.

Directions

 

  • First, we will prepare cream for the pastry. In a mixing bowl, take 1 cup chilled whipping cream (non-dairy). Beat it at high speed for 3-4 minutes.
  • The cream already has sugar and vanilla flavour added. If you want, you can add black currant flavour. Now we will scrap cream from all sides once sharp peaks have formed.
  • We will beat it again for a while until we get stiff peaks.We will line the cake tin with Oddy Ecobake and we will now prepare batter for the cake. We will prepare sponge cake in a different way.
  • Take 1/2 cup of water in a bowl, add 3/4 cup of grinded sugar, 1/2 tsp cake gel and 1/2 tsp of black currant essence. With the help of a beater, we will beat it until we get a creamy texture.
  • The creamy mixture is ready and now we will add the dry ingredients. Take a sieve and add all purpose flour, baking powder and salt. Then add oil and mix all the ingredients well. Mix it in one direction as shown to make the cake fluffy.
  • Transfer the batter into the cake tin and bake it in a preheated oven or OTG at 180 Degrees Celsius for about 30-35 minutes. Check if the cake is baked properly or not with the help of a skewer.Once it cools down, divide the cake in 3 layers.
  • To soak the cake,we will make black currant syrup. For that, take black currant crush and add some water to it. Mix it and soak the cake like shown.
  • Spread the cream and then black currant crush and put the top layer upside down. Design like shown and your pastry is ready to eat.
