Soft Eggless Butter Coconut Cake

About the Recipe

Desiccated coconut is delicious and has a pleasant flavour. This coconut cake pairs well with a nice cup of tea or coffee and will transport you to the tropics. You can bake the cake without lubricating the mold with the Oddythe Oddy Ecobake. Additionally, it makes cake demolding easy.

Ingredients

 

  • 1/4 Cup butter & 3/4 cup powder sugar
  • 1/2 cup curd & 1 cup maida
  • 1 tsp baking powder & 1/2 tsp baking soda
  • 1/2 tsp rose essence (optional) & 1/4 cup milk
  • 1/3 cup desiccated coconut & Oddy Ecobake

Directions

 

  • Take soft butter in a bowl and beat it with powdered sugar in a mixing bowl.
  • Once the mixture is fluffy and creamy, add fresh curd to the butter-sugar mixture and mix well.
  • Add the dry ingredients to the bowl through a sieve. Mix everything together to form the cake batter.
  • Add dessicated coconut to the batter and combine well. Transfer the batter to a mould lined with Oddy Ecobake.
  • Garnish the cake with dessicated coconut. Bake the cake for 25 to 30 minutes in a preheated vessel on low flame.
  • Once the cake is baked and cooled, demold it. Remove the Oddy Ecobake and cut it into slices.
