Bubble Cake with Nuts

Navratri Special Dhokla for Vrat. Dhokla is a popular and traditional Indian recipe originating from Gujarat. One of the key issues that people face when steaming dhokla is that it gets stuck to the pan. When we take it out, the shape gets broken. Ingredients

 

  • Boost - 1 tbsp, Butter - 1 tbsp & Hot milk - 1/2 cup
  • Maida - 1 cup, Baking soda - 1/2 tsp & Baking powder - 1 tsp
  • Eggs - 3, Vanilla essence - 1 tsp & Powdered sugar - 1 cup
  • White chocolate - 1/2 cup, Butter - 1 tbsp & Hot cream - 1/2 cup
  • Whipped cream - 1 cup & Boost - 1/2 sachet
  • Hot milk - 1 cup, Boost - 1/2 sachet & Sugar - 1 tsp
  • Chopped nuts, Choco chips & Oddy Ecobake

Directions

 

  • Prepare a boost mixture by mixing boost, hot milk, and butter. Keep it aside. Mix the dry ingredients in a bowl. Beat eggs in a bowl along with vanilla essence and powdered sugar until a creamy texture is attained.
  • To make cake batter, gradually add the boost mixture and dry ingredients to the egg mixture and mix well. Transfer the batter to a cake mould lined with Oddy Ecobake.
  • Bake the cake for 45 minutes in a preheated oven at 180 °C. Once the cake is baked and cooled, divide it into three equal parts. Soak the cake sponges with sugar milk, and boost mixture.
  • Add the boost to the whipped cream and beat well. Prepare chocolate ganache by melting hot cream, white chocolate, and butter together. Refrigerate it for half an hour.
  • Apply and spread the whipped cream and white chocolate ganache on the first layer of the cake sponge. Sprinkle with chopped nuts and chocolate chips.
  • Place the second and third layers on it and repeat the same process. Frost the cake completely with whipped cream. Garnish the sides of the cake with nuts and chocolate chips.
  • Make bubbles with white chocolate ganache on the top of the cake with a piping bag. Sprinkle Boost over the top of the cake. Decorate the bubbles with chocolate ganache and chocolate waffles as shown.
