Choco Peanut Sandwich Pastry

A delectable in all ways this spongy pastry filled with a mixture of roasted peanuts and chocolate is surely going to take you to heaven. Extra chocolaty and crunchy at the same time. Oddy Ecoabke helps to bake the perfect sponge cake.

Ingredients

 

  • Oddy Ecobake
  • 1/4 Cup sugar powder
  • 1/4 Cup fresh curd
  • 2 Tbsp oil
  • 1/2 Cup all-purpose flour
  • 1.5 Tbsp cocoa powder
  • 1/4 Tsp baking powder
  • 1/4 Tsp baking soda
  • 1/2 Cup milk
  • 100 gm dark chocolate
  • 2 Tbsp hot milk
  • Roasted peanuts
  • Melted chocolate
  • Golden sugar

Directions

 

  • Place Oddy Ecobake on the base and sides of baking tin. Oddy Ecobake helps in easing demolding and is non-greasy.
  • In a bowl add sugar powder, fresh curd, oil and mix. Sieve all-purpose flour, cocoa powder, baking powder, baking soda, mix and whisk well.
  • Gradually add milk and make a smooth batter. Pour the batter into baking tin. Tap to avoid any air bubbles. Place in a pre-heated kadai. Cover and bake in low flame for 20 mins.
  • Remove lid after 20 mins. Check if fully baked and remove from heat. In a bowl add dark chocolate and hot milk, mix till chocolate melts. Add crushed roasted peanuts and mix well.
  • Unmold our sponge and trim upper layer and smooth out surface. Slice cake into two halves. Cut into square pieces. Apply chocolate peanut mixture on one sponge and sprinkle crushed roasted peanuts. Stick sponge on top.
  • Dip and coat the sandwich with melted chocolate on all sides. Place in Oddy Ecobake. Garnish with melted chocolate and sprinkle golden sugar.
