Ingredients

  • Oil - 1/3 cup & Curd - 1/3 cup
  • Powdered Sugar - 1/2 cup & 2 tbsp
  • Maida - 1 cup & A pinch of salt
  • Cocoa Powder - 1/4 cup & Milk - 1/2 cup
  • Baking Powder - 1 tsp & Baking Soda - 1/2 tsp
  • Cream - 1 cup, Powdered Sugar - 3 tbsp & Cocoa Powder - 2 - 3 tbsp
  • Water - ¾ cup, Cocoa powder – 3 tbsp
  • Powdered sugar – 1/3rd Cup
  • Dark chocolate compound – ½ cup

Directions

  • To make the cake batter, in a mixing bowl, add all the wet ingredients and mix well. Place a strainer over the bowl and strain the dry ingredients. Mix the dry and wet ingredients. Add 2-3 tbsp of milk to adjust the consistency. Take a 6 inch cake tin and line it with Ecobake cooking paper circle, then transfer the cake batter into it.
  • Place the cake batter on the wire stand inside the cooker, cover it with the lid, and bake for 45–50 minutes on low heat. You can also bake the cake in a preheated oven at 170 °C for 35–40 minutes. Demould the cake after it's completely baked and let it cool completely. Divide the cake into 3 equal parts with the help of a knife and thread, as shown.
  • To make cake frosting, in a bowl, take 1 cup chilled whipping cream. Add 2 tbsp cocoa powder and 3 tbsp powdered sugar and mix all the ingredients. Whip the cream until stiff peaks are formed.
  • To make chocolate mirror glaze, in a pan, take 3/4 cup water and then add cocoa powder and powdered sugar and mix well. Heat the pan over medium heat until it is slightly thickened. To the pan, add 1/2 cup chopped dark chocolate compound. Mix and melt the chocolate on a low flame.
  • When the mixture turns smooth and semi-thick as shown, the chocolate mirror glaze is ready. Strain the glaze into a bowl. Place a cake board on the board and spread some cream on it to make cake frosting. Place the first cake layer on top and brush with sugar syrup to moisten. Apply cream and smoothen a bit, then apply 1 heaped spoon of chocolate glaze on it. Repeat the process for 2 more cake layers.
  • Smoothen the top layer with a spatula and crumb coat the cake sides. Apply some more cream on the cake sides and smooth with a cake scrapper.
  • Place the cake on a stand as shown. Pour the prepared chocolate glaze over the cake top. Coat the cake sides with glaze with the help of a spatula. Leave the cake like this for 2 minutes to set the glaze properly on the cake. Decorate the cake as shown or as per your wish. The Chocolate Mirror Glaze Cake is ready: perfectly shiny, glazy, and delicious.
