About the Recipe
This recipe is made from mashed ripe bananas, walnuts and jaggery. This eggless banana cake is delicious and super fun to make. Oddy Ecobake makes the process of baking super ease, as it is non-sticky and grease-proof.

Ingredients
- 2-3 Ripe bananas
- ½ cup jaggery powder
- ½ cup oil
- ½ cup curd (room temperature)
- 1 tsp vanilla essence
- 1 and 1/4th cup all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon powder
- 1 pinch nutmeg powder
- Chopped walnuts
- Chopped dates
- cranberries
- Grated carrots
Directions
- In a mixing bowl add ripe bananas, jaggery powder, oil, curd and vanilla essence. Mix well with a whisk.
- Sieve all purpose flour, baking powder, baking soda, cinnamon powder and nutmeg into the mixture and whisk again.
- Add chopped walnuts, dates, cranberries and grated carrots and give a final stir to the cake mixture. The cake batter will be thick in consistency.
- Oddy Ecobake brown baking and cooking paper is used to cover the base of the loaf tin. Oddy Ecobake is non-greasy and hence we do not need to grease it before adding the cake batter. Oddy Ecobake is also non-sticky and because of this removing the cake after baking becomes an easy task. Also, Oddy Ecobake is ideal for baking up to 230 deg C.
- Bake the cake for 180 degrees Celsius for 35-40 mins. Once cooled, dazzle the cake with white and brown ganache.
