Coffee Cake with Chocolate Truffle Frosting

Coffee chocolate truffle cake is a rich, decadent cake made with a moist coffee cake base and creamy, silky chocolate truffle icing. Oddy Ecobake helps you bake the cake in perfect shape without greasing the mold. Hence, there is no need for additional cleanup.

Ingredients

 

  • Instant coffee powder - 2 tbsp & Warm water - 2 tbsp
  • Milk - 1/2 cup + 2 tbsp, Vinegar - 1 tsp & Vanilla essence - 1 tsp
  • Oil - 1/4 cup, Sugar - 1/2 cup + 2 tbsp & Maida - 1 cup
  • Baking powder - 1 tsp & Baking soda - 1/4 tsp & Oddy Ecobake
  • Sugar syrup, Dark chocolate - 300 gm & Fresh cream - 250 ml

Directions

 

  • Prepare the coffee concoction by mixing instant coffee powder with warm water and keeping it aside. In a bowl, add milk and mix vinegar with it to prepare buttermilk.
  • Later, add all the wet ingredients and coffee concoction and give them a good mix. Add the dry ingredients through a sieve to the same bowl.
  • Combine everything to prepare the cake batter. Transfer the cake batter to a mould lined with Oddy Ecobake. Bake the cake for 45 minutes in a preheated vessel on the stove.
  • Once the cake is baked and cooled, divide it into three equal parts. Prepare chocolate truffle ganache by melting dark chocolate along with fresh cream in a pan.
  • Place the first cake layer on a cake board, soak it with sugar syrup, and apply chocolate truffle ganache to it. Spread evenly.
  • Repeat the same process for the second and third layers of the cake. Frost the cake completely with chocolate ganache. Make a rippled pattern on the sides of the cake with a cake comb.
  • Refrigerate the cake and remaining truffle ganache for 10 minutes in the fridge. Transfer the thickened ganache to a piping bag fitted with a nozzle.
  • Make the braided pattern on the border and centre of the cake as shown. Decorate the cake with golden sugar balls as shown.
