Crispy Rava Vada

About the Recipe

Rava vada are delicious fried fritters made from rava, mixed spices, and sour curd. They are called “Sajjige vade” in Kannada and are not commonly found on hotel menus. They can be served as a snack or as a side dish for rasam rice, sambhar rice, or curd rice. The vada is dropped into oil by using Oddy Ecobake Brown, which is very convenient to use and also provides the necessary greasing for them to drop into oil.

Ingredients

 

  • Sliced Onion-1 & Ginger-1/2 inch & Curry leaves- few
  • Green chili -2 & Chopped Coriander leaves –a handful
  • Cumin-1 tsp & Salt- as needed
  • Medium rava or Bombay rava-1 cup & Ghee-1 tsp + 2 tbsp
  • Oil- 1 tsp + for frying Sour curd
  • Oddy Ecobake Brown

Directions

 

  • Take sliced onions, chopped ginger, curry leaves, coriander leaves, chopped green chili, salt, and cumin in a mixing bowl, and mix well with your hands until they mix together.
  • Add rava, ghee, and a spoonful of hot oil to it and mix well.
  • Add the sour curd to it gradually and mix well to form a soft dough. Cover and let it rest for 30 minutes.
  • Heat oil in a pan, make small balls from the dough, press them flat on Oddy Ecobake Brown, and drop each of them carefully in the hot oil.
  • Fry them until they turn brown and crisp. Remove them from the oil and serve them hot with spicy chutney.
