Crispy Sesame Paapdi

An easy to make sweet and healthy chikki. Chikki’s are usually thick but we are making a thin paapdi version of sesame chikki here. Few things are to be kept in mind while making it thin, check the steps to achieve crispy sesame papdi. Also, sesame seeds are great for the winter weather. Use Oddy Ecobake to achieve perfect thin crisp paapdi as it is non-sticky.

Ingredients

 

  • White sesame seeds 1/2 cup
  • Jaggery 1 cup
  • Ghee 1 tbsp
  • Oddy Ecobake

Directions

 

  • Take sesame seeds and dry roast in a pan. Roast for 2-3 mins till it gets slightly puffed. Now remove the sesame seeds on a plate.
  • In the same pan add ghee and jaggery and let the jaggery melt completely. It will take 2-3 mins fir it to melt completely. The mixture should be thick, to check its consistency put a small drop of the jaggery mixture in water.
  • If it forms a droplet and thickens then the mixture is done. Also, bubbles are formed when the jaggery mixture thickens. Once a perfect consistency is formed switch off the gas and add sesame seeds. Mix well to bind it properly.
  • Take Oddy Ecobake and cut it into smaller size. Place it on rolling pin. Apply a little ghee on it and take a spoonful of chikki mixture and fold the Oddy Ecobake and roll it with a rolling pin.
  • Remove the paapdi after half minute and place it in Oddy Ecobake. Do this will all the mixture of Chikki. You have to do this when the mixture is still hot. Serve the Crispy Sesame Paapdi as snacks.
