Raisins Plum Cake

If you are looking to bake a cake for Christmas, then this recipe shows how to make cake from soaked raisins. You can use any dry fruit of your choice. The cake is baked perfectly soft and spongy by using Oddy Ecobake to line the baking tray, so you do not need to grease it, and the cake comes off effortlessly after baking.

Ingredients

 

  • Eggs-3 & Sugar-3/4 cup + 2 tbsp
  • All purpose flour-1 cup & Unsalted butter-100 g
  • Raisins-1 cup & Nutmeg powder-1 tsp
  • Dry ginger powder-1 tsp & Cinnamon powder-1 tsp
  • Pumpkin pie spice-1 tsp & Salt- to taste
  • Baking powder-1/2 tsp & Baking soda-1/4 tsp
  • Vanilla essence-1 tsp & Dark rum
  • Oddy Ecobake

Directions

 

  • Soak raisins in rum for a week or boil them in rum for 5 minutes. Caramelize sugar in a pan and add water to it to avoid caramelizing further.
  • Add the dry ingredients and spice powders to a bowl, mix together, and keep aside.
  • Add soft butter, salt, and vanilla essence to another bowl and beat with eggs. Now add the mixed dry ingredients to this and give it a whisk.
  • Now add caramel to it, then add soaked raisins to it and mix well. Line an 8-inch baking tray with Oddy Ecobake.
  • Transfer the cake batter into it and bake for 40–45 minutes at 180 degrees Celsius.
  • Let it cool and demold. Soak it with rum if needed. Cut into slices. Store in an airtight container.
