Delicious Rasmalai Cake

About the Recipe

Rasmalai is an Indian dessert made from soft paneer balls soaked in sweetened milk flavored with cardamom and saffron and garnished with nuts. Rasmalai cake is a fusion of rasmalai and eggless sponge cake that tastes so delicious and rich. The cake sponge is made on the stove by lining the baking pan with Oddy Ecobake, which is very convenient to cut to the ideal size and is also non-sticky and safe.

Ingredients

 

  • Vegetable Oil - 1/2 Cup (120 ml) & Powdered Sugar - 2/3 Cup (80 gm)
  • Curd - 1/2 Cup (100 gm) & Saffron Milk - 1 Cup (240 ml)
  • Rose Water - 1 Tsp & All Purpose Flour - 1+1/4 Cup
  • Baking Powder - 1 Tsp & Baking Soda - 1/2 Tsp
  • Chilled Whipping Cream - 1 Cup & Cardamom Powder - 1 Tsp
  • Powdered Sugar - 2 Tbsp & Yellow Food Colour - 2 Drops
  • Rasamalai pieces & Dry Rose Petals
  • Chopped Pistachios & Saffron & Fresh Rose petals
  • Oddy Ecobake

Directions

 

  • Mix together vegetable oil, powdered sugar, and curd in a mixing bowl. Then mix saffron milk and rose water into it.
  • Then also add the sifted dry ingredients to it and mix well using the cut-and-fold method to make a smooth batter.
  • Line a baking tray with Oddy Ecobake. Transfer the batter into it, spread it out, and tap it well. Preheat a kadhai covered with a lid for 10 minutes. Cover and bake the cake for 40–45 minutes on a low flame. The eggless cake sponge is ready; let it cool completely.
  • Unmould and divide into three layers. Add whipping cream, cardamom powder, yellow food colour, and powdered sugar to a bowl and beat well for 7-8 minutes. Fill it in a piping bag.
  • Apply cream to the cake board and place a layer of cake on it; soak it with malai; spread whipping cream; and garnish with a few pieces of rasmalai. Repeat the process for the other two layers.
  • Frost the cake with cream and create a pattern on the sides using a cake comb. Decorate with cream as you prefer. Garnish with dried rose petals and chopped pistachios.
  • Place a few pieces of rasmalai on top and decorate with fresh rose petals. Refrigerate for 2 to 3 hours. Cut into slices and enjoy.
