Easy Mango Pastries

About the Recipe

Mango is everyone’s favorite, and so is mango cake. Here is an easy and simple recipe to make delicious Mango Cake at home using simple ingredients which are easily available. Suitable for almost every occasion, this recipe will take very less time and effort, especially when your too busy in other preparations.

Ingredients

For Batter

  • 1 Fresh Medium Size Mango
  • ½ cup Sugar
  • 60ml Oil
  • 1 tsp Vanilla Essence
  • ⅓ cup of Milk
  • 1+¼ cup All purpose Flour
  • 1+¼ tsp Baking Powder
  • ½ tsp Baking Soda

Ingredients

For Frosting

  • 2 Mangoes for 1 cup Mango Puree
  • ½ Cup Sugar
  • 310ml chilled whipped cream
  • 3tbsp Dark Chocolate compound

Directions

 

  • Take a medium size mango chopped in medium size pieces and transfer it to a grinding jar, add ½ cup of sugar to the jar. Grind them to get smooth mango puree. Transfer the puree to the cup to measure, it should be 1 full cup.
  • Transfer the puree to a mixing bowl, add ¼ cup (60ml) of oil, 1 tsp of vanilla essence. And mix it using your hand, add 6 tbsp of milk and add properly.
  • Take a sieve and strain 1+¼ cup of Maida, +¼ tsp of baking powder, ½ tsp baking soda, and 2 pinch of salt in the bowl and mix it well to get smooth and lump free batter. Now transfer the batter into the cake tin lined with Oddy Ecobake Baking and cooking paper, and place it in preheated kadhai, and bake it for 50-55mins.
  • Grease 2 small plates or thalis (4-5 inch diameter) using 1-teaspoon oil.
For Frosting:
  • To make mango glaze for cake take 2 medium size mangoes, chopp them and grind them to get 1 cup mango puree. Transfer the puree into the pan and add ½ cup of sugar and ¼ cup of water to it. Cook it and keep stirring till it gets a little transparent.
  • After cooking, start the mango glaze into a bowl and let it cool. For frosting take chilled whipping cream in a bowl and whip it till it gets stiff and transfer it into a piping bag.
  • Take a 2 tbsp of mango glaze in a bowl and add ⅓ cup of water, mix them and your mango syrup is ready to moist your cake.
  • Demold the cake and divide it into three layers, place the first layer moist with mango syrup we made and add a coat of whipped cream and mango glaze, place a second layer and repeat the procedure, similarly for the third step.
  • At last cover the cake completely with cream and smoothen it using a spatula or card.Let it set.
  • Take ½ cup of white chocolate compound in a bowl and 3-4 tbsp dark chocolate compound in another bowl, melt both and transfer in the piping bag
  • Take an OHP sheet and make a zig-zag pattern on it using melted dark chocolate compound. After sometime pour the melted white chocolate compound on it and spread it evenly using a spatula and let it set.
  • Using a cookie cutter and bottle cap, cut out the designs as shown in the video.
  • Take the cake and cover its top using mango glaze, smoothen it using a spatula and make a dripping pattern on the side. Cut the cake in 6/12 pieces, and place the chocolate decorations on the pieces.
  • Using whipping cream in a 1M nozzle piping bag, make some design in front of the decorations and garnish it using cherries. And your Mango Pastries are ready to serve.
