Eggless Fruit and Nuts Cake

Christmas is around the corner and it calls for fruit cake. Try this simple, no-fuss eggless fruit and nuts cake recipe and share the warmth of the holidays with family and friends. Ingredients

 

  • Oddy Ecobake
  • All-purpose flour or maida- 1 and 1/4 cup or 180 g
  • Refined oil- 1/4 cup
  • Grinded sugar- 3/4 cup approx. (1/2+ 1/4 cup)
  • Milk- 1/2 cup or 100ml
  • Baking powder- 1 tsp
  • Baking soda- 1/4 tsp
  • Vanilla essence- 1/2 tsp
  • Lemon juice- 1 tsp
  • Chopped Mixed fruits- 1/2 cup (Dried Cranberry, Pomello, Papaya, Pineapple)
  • Chopped Blueberries- 2 tbsp
  • Chopped dry fruits- 6 almonds and 6 cashew nuts

Directions

 

  • Line a 6-inch diameter cake with Oddy Ecobake. Oddy Ecobake helps in easy demolding of the cake.
  • For the cake batter, in a bowl add refined oil, powdered sugar, vanilla essence, milk and beat till sugar dissolves. Sieve maida, milk powder, baking powder and baking soda and whisk well in the wet ingredients. Make sure no lumps are formed. Make a smooth flowy batter.
  • Add chopped blueberries, dry fruits and mixed fruits. Mix the batter nicely. Add lemon juice and mix well. Our cake batter is ready. Pour the cake batter in baking tin. Tap the tin to remove air bubbles. Garnish with some chopped mixed fruits and dry fruits.
  • Kadai is preheated on medium flame for 5 mins. Bake the cake for 35-40 mins on low medium flame. In oven you can bake for 35 mins on 180 degrees. Check after 35 mins, if knife comes out clean then our cake is ready.
  • After colling down demold the cake. Our Eggless Fruit and Nuts Cake is ready. Cut and serve.
