Eggless Pineapple Swiss Roll Cake

  • 1 cup all purpose flour
  • 1/2 cup powdered sugar
  • 1 tsp + 1 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tbsp milk powder
  • 1/4 cup refined oil
  • 1/2 cup + 2 tbsp milk
  • 1/2 tbsp vinegar
  • yellow food color as per requirement
  • Icing sugar for decoration



  • Line a tray of 12.5 x 8.5 inches with Oddy EcoBake Paper. In a big bowl, mix all purpose flour, powdered sugar, baking powder, baking soda and milk powder.
  • In dry ingredients above, add refined oil, milk, baking powder and vinegar. Whisk these ingredients into a smooth batter. Now, add milk gradually and whisk smooth.
  • Pour this batter in the tray lined with Oddy EcoBake paper and spread evenly. Tap the tray lightly to avoid any bubbles.
  • Pour a few drops of food color and make a pattern using any thin stick. Now, bake the batter at 180 degrees in convection mode for 10-12 minutes. Keep it on lower rack if using an oven, in middle rack if using an OTG. After 12 minutes prick with a toothpick to check if its fully baked. Note: The upper side should not become hard as that would break the roll while folding.
  • After taking out the tray, cover it with a moist cotton cloth and remove it after 10-15 minutes. Then place the sponge cake on a board lined with Oddy EcoBake Paper . Place the Oddy EcoBake paper on top as well. Now invert the sponge cake carefully.
  • Using Oddy EcoBake Paper, roll the sponge cake into a roll. Refrigerate it for 1-2 hours. Meanwhile, in a separate bowl, whisk whipped cream till its fluffy and light.
  • Take the roll out, and spread the cream evenly. You can use cream, jam or pineapple crush for spreading inside the roll as per your choice.
  • Now, fold the cake with cream inside carefully (without Oddy paper). Remove any extra cream and apply on sides if necessary. Now, cover the roll with Oddy EcoBake paper and refrigerate it for minimum 1 hour. You can refrigerate it for even a day for best results.
  • Sprinkle some icing sugar. You can make designs using cream (with added food color). Your eggless cream/pineapple is ready to be relished.
