Eggless Plum Cake for Christmas

About the Recipe

Make this healthy plum cake from all the dry fruits, like cashews, raisins, and dates. It is made without eggs, butter, and sugar and made on a stove for Christmas. The baking tray does not need any greasing when Oddy Ecobake is used, and the cake comes off effortlessly while demolding the cake.

Ingredients

 

  • Dry fruits and nuts-50 g, Store bought grape juice/Orange juice
  • Brown sugar-3/4 cup, Water-1/2 cup
  • Cinnamon stick-2, Cardomom-1, Cloves-1
  • Fresh curd-1/4 cup, Vanilla essence-1 tsp
  • Refined oil-1/2 cup, All purpose flour/Wheat flour- 1.5 cups
  • Baking powder-1 tsp, Baking soda-1/2 tsp
  • Oddy Ecobake

Directions

 

  • Soak dry fruits and nuts in grape or orange juice overnight in the fridge or for at least 1 hour.
  • Boil and melt brown sugar along with cinnamon, cardamom, and cloves. Let it cool completely.
  • Take the curd and vanilla essence into a bowl and whisk. Now add the melted sugar syrup by filtering it. Then add refined oil and whisk again.
  • Add the dry fruits to it, and then add the sifted flour, baking soda, and baking powder to it and mix well. Preheat a tawa for 5 minutes on a low flame.
  • Line a cooker with Oddy Ecobake, cut to the size of the base. Transfer the batter into it, tap it, and spread it well. Bake the cake for 40–45 minutes without the cooker's whistle on a low flame.
  • Check with a knife if it's completely baked: A clean knife means a perfectly baked cake.
  • Cool completely and demold. Cut into slices. Store in an airtight container.
