Eggless Spongy Vanilla Cake

If you want to make a simple and quick vanilla cake for your kids or guests, then make this eggless, spongy vanilla cake that is made on the stove. It will have a sweet, buttery, light, and moist texture. Make a soft and smooth cake by baking it with Oddy Ecobake, which is non-sticky so the cake slides off the baking tray effortlessly and is also non-toxic.

Ingredients

 

  • Fresh Curd-1/2 cup & Powdered Sugar-1 cup
  • Vanilla extract-1/2 tsp & Refined oil-1/2 cup
  • All-Purpose Flour-1.5 cups & Baking powder-1 tsp
  • Baking soda-1/2 tsp & Milk-3/4 cup
  • Oddy Ecobake

Directions

 

  • Mix together curd and sugar in a bowl. Now add vanilla extract and oil to it and whisk well for 2–3 minutes.
  • Then add the sifted dry ingredients to it, whisk well without lumps, and add milk gradually to it to form a smooth batter.
  • Line a baking pan with Oddy Ecobake. Transfer the batter into it, tap well, and spread it uniformly.
  • Cover and preheat a kadhai for 10 minutes. Cover and bake the cake for 35–40 minutes on a low flame.
  • Check with a toothpick—a clean toothpick means a perfectly baked cake. Let it cool completely. Unmold it and cut it into pieces. A perfectly baked eggless, spongy vanilla cake is ready.
