Flavorful Christmas Plum Cake

A plum cake is made with dried fruits soaked in alcohol or orange juice for more than a day. This recipe shows you how to make a rich plum cake from dry fruits soaked in grape juice, and the cake gets its brown colour from the melted brown sugar syrup added to it. This recipe shows how to make a healthy plum cake without eggs, alcohol, or an oven. The plum cake is made perfectly spongy by using Oddy Ecobake to line the cooker used to bake the cake. Ingredients

 

  • Dry fruits and nuts-50 g, Store bought grape juice/Orange juice
  • Brown sugar-3/4 cup, Water-1/2 cup
  • Cinnamon stick-2, Cardomom-1, Cloves-1
  • Fresh curd-1/4 cup, Vanilla essence-1 tsp
  • Refined oil-1/2 cup, All purpose flour/Wheat flour- 1.5 cups
  • Baking powder-1 tsp, Baking soda-1/2 tsp
  • Oddy Ecobake

Directions

 

  • Soak dry fruits and nuts in grape or orange juice overnight in the fridge or for at least 1 hour.
  • Boil and melt brown sugar along with cinnamon, cardamom, and cloves. Let it cool completely.
  • Take the curd and vanilla essence into a bowl and whisk. Now add the melted sugar syrup by filtering it. Then add refined oil and whisk again.
  • Add the dry fruits to it, and then add the sifted flour, baking soda, and baking powder to it and mix well.
  • Preheat a tawa for 5 minutes on a low flame. Line a cooker with Oddy Ecobake and cut to the size of the base. Transfer the batter into it, tap it, and spread it well.
  • Place it on the preheated tawa and bake the cake for 40–45 minutes without the cooker's whistle on a low flame.
  • Check with a knife if it's completely baked: A clean knife means a perfectly baked cake. Cool completely and demold. The healthy and delectable plum cake with dry fruits and nuts is ready. Cut into slices.
