Victorian Fruit Cake

The Victorian Fruit cake is a cake sponge that combines sweet, citrus, fresh, and delicate flavours. It is full of flavours and texture. The sponge is quite moist, and it tastes divine when paired with nuts. The cake is baked for an extended period of time without the use of raising agents like baking soda and powder. Oddy Ecobake, a non-stick baking sheet lining, helped the cake bake spongy, making demolding it easy. The taste and flavor of the cake are unaffected by its prolonged baking time because it is heat-resistant.

Ingredients

 

  • Seedless raisins-300 g & Currants-200 g & Dates-200 g
  • Candied Orange Peel-200 g & Glanced Cherries-100 g
  • Mixed dried fruits like kiwi, strawberries, papaya, pineapple, plums, prunes- 200 g
  • Candied Ginger-100 g & Rum-200 ml & Orange Zest-2
  • Lemon Zest-2 & Unsalted Butter -200 g & All-purpose flour-200 g
  • Eggs- 4 & Vanilla-2 tsp & Ground Cinnamon -1 tsp
  • Salt-1 tsp & Ground Ginger-1 tsp & Ground Nutmeg-1/2 tsp
  • Ground Cloves-1/4 tsp & All Ground spice-1 tsp & Rum-100 ml
  • Oddy Ecobake

Directions

 

  • Take all dried fruits in a bowl, Add in orange zest, lemon zest, and candied ginger. Add in rum and mix well. Leave it to soak overnight.
  • Take butter and brown sugar in a sauce pan and melt on low flame stirring continuously. Once it turn into thick caramel, remove from heat and leave it to cool down. In a mixing bowl, take flour, add salt and all the spice powders and mix well and keep aside.
  • In another mixing bowl, add in eggs and vanilla mix well and set this aside. Now add in the caramel, egg mix and flour to your soaked dried fruits and use a steel spoon to mix it well so everything is combined. You can add rum at this point.
  • Line a baking pan with Oddy Ecobake and shift the batter into the baking pan, spread and tap well. Bake at 140 degree C for 1 hour, Then Reduce Temp to 125 degree C and bake for 2 to 21/2 hours.
  • Remove the cake from oven and check whether it is baked. You can insert a tooth pick to check whether it comes out clean. If it comes out clean then the cake is baked. Pour brandy or rum over the cake while it is still hot.
  • Leave it to cool completely. Unwrap the cake and serve immediately or wrap the cake for Christmas.
