Fresh Strawberry Shortcake

About the Recipe

Do you have strawberries left over in your fridge or are you planning to make a cake out of strawberries? Then this recipe shows you how to make strawberry shortcake that layers the uncooked berries between layers of scones. The scone is made from flour, sugar, butter, milk, or cream. The Oddy Ecobake paper, which is reusable and eco-friendly, is used to bake smooth scones.

Ingredients

 

  • Milk-1/2 cup, Lime juice-1 tsp & Cold butter- 90 g
  • Salt- to taste, Vanilla essence-2 tsp & Maida - 1 cup+1/3 cup
  • Sugar-4 tbsp, Baking soda-1/4 tsp & Baking powder-2 tsp
  • Strawberry - 3 cups chopped finely + Extra Whole Strawberry
  • Whipping cream - 2 cups & Icing Sugar - 3 tbsp +¼ cup

Directions

 

  • Add lime juice to milk to make it into buttermilk. Add the dry ingredients to a bowl with the cold butter and crumble it. Add buttermilk as needed and mix with a fork. Line the baking tray with Oddy Ecobake cooking paper.
  • Dust the rolling board with flour, flatten the dough, and fold as shown. Cut cookies using a cookie cutter. Coat with buttermilk on the top and dust sugar on the cookies. Bake the scones in a preheated oven for 14–15 minutes at 200 degrees Celsius.
  • Cool and transfer the scones to a wire rack. Marinate strawberries with sugar and vanilla essence. Beat the whipping cream; add icing sugar and vanilla essence. Slice the scones in half, place a layer of strawberry mixture on top, and cover them with whipped cream.
  • Place another slice on top. Serve it with a sliced strawberry on top. The strawberry shortcake is ready; consume it immediately.
