Fruity And Nutty Plum Cake

About the Recipe

Plum cake is a fruity and nutty cake recipe with the goodness of dried cherries, almonds, raisins, and many more dried fruits. You may or may not add rum. Try this super delicious, fruit and nut-loaded plum cake for your special occasions or for next Christmas. The cake can be either made on the stove or in an oven. The cake glides off of the baking pan while lined with Oddy Ecobake, which is healthy and non-toxic.

Ingredients

 

  • Dry fruits and nuts-25 g (each) & Ginger candy, orange pulp-25 g
  • Mixed fruit juice-as much needed & Butter-100 g
  • Brown Sugar or sugar-3/4 cup & Essence-1 tsp
  • Warm water-1 tbsp & Maida-1+1/4 cup
  • Milk powder-1/2 cup & Cocoa powder-1/4 cup
  • Baking powder-1 tsp & Baking soda-1/ tsp
  • Cake masala-1 tsp & Water-1/2 cup Oddy Ecobake

Directions

 

  • Soak dry fruits and nuts in mixed fruit juice for one or two days. Cover and preheat a kadhai with a wire stand for 10 minutes.
  • Line a baking tray with Oddy Ecobake. Beat brown sugar and butter in a bowl. Then add the essence and warm water to it and mix well.
  • Then add the sifted dry ingredients to it and beat well. Mix water and soaked dry fruits to it. The cake batter is ready.
  • Transfer the batter to the baking tray, tap well, and spread. You can use a paper tin instead of the baking tray as shown.
  • Garnish with dry nuts on top. Bake the cake for 35–40 minutes at 180 degrees Celsius. Cover and bake on the stove for 35–40 minutes on a low flame.
  • Let it cool completely and demold. Wrap it up and gift it to someone. Cut into slices. Serve.
