Horlicks Burfi

This recipe shows how to make Horlicks burfi, a south Indian fusion recipe to classical Mysore Pak made with Horlicks and besan that has similar taste and texture as usual besan flour burfi. It can be served for any occasion. Use Oddy Ecobake, which is so convenient and reusable that you do not need any greasing when transferring the burfi mixture to a mould.

Ingredients

 

  • Besan/chickpea flour- 3/4 cup & Horlicks powder- 1 cup sugar
  • Ghee- 1 cup & Sunflower oil - 1/4 cup
  • A pinch of salt & Cashews and pistachios
  • Elaichi/cardamom (optional) & Water-3/4 cup
  • Oddy Ecobake

Directions

 

  • Roast besan flour in a pan for 1 to 2 minutes on low heat and sift it. Take sifted besan flour in a bowl and add Horlicks powder, salt, and oil to it. Make it into a soft batter.
  • Make sugar syrup by boiling it with water to a string consistency. Add the batter to it and stir continuously over a low flame.
  • Bring it to a boil and add ghee to it gradually. Add chopped cashews to it. Turn off the flame when the mixture starts leaving the sides of the pan.
  • Line a baking tray with Oddy Ecobake. Pour the mixture into it and spread it evenly. Garnish with chopped pistachios. Let it cool for a few hours.
  • Unmold the burfi. Cut the burfi into the desired shape and size.
