Instant Crispy and Soft Kajjaya

About the Recipe

Kajjaya is a delightful, traditional South Indian dessert made from rice flour and jaggery. Here we are going to make Kajjaya with store-bought, fine rice powder. Brown Oddy Ecobake helps flatten the Kajjaya roundels made with rice flour and sugar effortlessly.

Ingredients

 

  • Rice Flour - 1.25 Cups
  • Jaggery - 1 Cups
  • White Sesame Seeds - 1 Tsp
  • Dry Ginger Powder - 1/4 Tsp
  • Elaichi Powder - 1/4 Tsp

Directions

 

  • Take the rice flour in a bowl and make it damp with water as shown. Sieve it to remove lumps and rest it for a while. Make sure the rice flour doesn't get dry. Melt jaggery in a pan with water. Boil it until the desired consistency is attained.
  • You should be able to make jaggery balls when you drop it into the water. Add elaichi powder, ginger powder, and sesame seeds to the jaggery syrup and mix well. Gradually add the rice flour to the syrup and mix well.
  • Once the mixture attains a dropping consistency, stop adding the rice flour to it. Transfer the rice flour to a bowl, add oil to it, and let it soak for 24 hours. After 24 hours, your dough is ready. Make equal-sized roundels from the dough as shown.
  • Flatten the roundel on a piece of Ecobake cooking paper by greasng your hands with a little oil. Make a hole in the center and fry them in oil. Your soft and crispy kajjaya is ready!
