Jaggery Cup Cake

Using jaggery as a sweetener and without eggs. Let us make Eggless Jaggery cupcakes, a perfect healthy evening snack, especially for vegans.

  • Jaggery - 1 cup
  • Cashew nuts , Almonds - 1/3 Cup
  • Wheat flour - 1 Cup
  • Curd - 1 Cup
  • Melted butter or ghee or vegetable oil - 1Teaspoon
  • vanilla Essence- 2-3 drops
  • Milk - 1 Cup
  • Baking Soda - 1 Teaspoon
  • Baking Powder - 1 Teaspoon
  • A pinch of salt


  • Grind the jaggery and cut the nuts.
  • Add 3/4 th cup of curd, melted butter,2 drops of vanilla essence, and 1/2 cup of jaggery to a bowl, mix it well until it forms a batter consistency.
  • To prepared batter add 1 cup of wheat flour and mix it well.
  • To the thick batter slowly add a cup of milk by continuous mixing.
  • Add baking soda, baking powder, and a pinch of salt, and mix it well.
  • Add nuts to the batter, line cupcake tray with Oddy ecobake parchment paper paper and place the batter in cupcake moulds, garnish it with nuts.
  • Bake it at 180 degrees C for 30mins.
  • Serve with love.
