Masala Chai Upvas Cake is a unique cake recipe. It is the first of its kind very interesting cake. People fasting during Navrati can enjoy guilt-free cakes.  One of the key issues that people face when baking cakes is that it gets stuck to the pan. When we take it out, the shape gets broken. Ingredients

 

  • 3/4 cup Water chestnut flour (singhare ka atta)
  • 1/2 cup Sama / Bhagar flour
  • 1/2 cup Amaranth flour
  • 3 + 1/2 tbsp - Arrowroot powder
  • 1 + 1/2 tsp - Baking powder
  • 3/4 tsp Baking soda & 1/4 tsp Xanthan gum
  • 1/4 tsp Rock salt & 1/2 tsp Potassium sorbate (optional)
  • 3 tsp Tea powder & 3 tbsp Sugar
  • 1/4 & 1/8 tsp Ginger powder & 1/4 & 1/8 tsp Cinnamon powder
  • 1/4 & 1/8 tsp Cardamom powder & 1/8 tsp & a pinch Nutmeg powder
  • 200 gm Condensed milk & Unsalted butter - 100 gm
  • 1/2 cup (180 gm) Milk (or as needed) & 1/2 cup & 2 tbsp Water
  • 1/2 tsp Masala chai essence (or vanilla essence - 1 tsp)
  • 1 tsp (or 1 sachet) Eno & 200 gm White compound
  • 3 tbsp Milk & 2-3 drops Brown colour

Directions

 

  • Place Oddy Ecobake Brown Paper into a 8 inches loaf tin. And keep aside.
  • Take a mixer grinding jar. Add all dry ingredients into it. Like, sama/bhagar flour, water chestnut flour, amaranth flour, arrowroot powder, baking powder, baking soda, xanthan gum, rock salt, ginger powder, cinnamon powder, cardamom powder, jaiphal powder, etc.
  • Grind it well and make fine mixture of it, like powder. Next make a strong, dark black tea using water, tea powder, sugar, and all masala powders. Keep aside.
  • Make white chocolate ganache using white compound and milk. And liquid brown colour into it and mix it properly. Glaze will be ready.
  • Take a bowl. And add condensed milk and butter into it. Beat them together with the help of electric beater, at low speed, until the mixture becomes smooth. This step can take around 4-5 minutes.
  • Add strong black tea and vanilla essence into it. And again mix it with the help of beater for 40-50 seconds. Sift the mixture of dry ingredients into this bowl. Mix it well with the help of beater.
  • Add milk gradually into it and make a smooth batter. At last, add eno into this batter. And add 2 tbsp milk over the eno to activate it. Quickly mix the batter. And pour into the tin.
  • Bake the cake on low flame of gas, for 45-50 minutes. Let the cake cools down completely, and then decorate it with the glaze and decicated coconut.
