Soft and Moist Eggless Swiss Roll

About the Recipe

Try this moist and spongy Swiss roll without eggs. You need only a handful of ingredients to make this swiss roll. Ecobake helps in getting the perfect shape for your base without greasing and it also aids in rolling the cake after applying honey and jam without any hassle.

Ingredients

 

  • All-purpose Flour or maida- 1 cup
  • Fresh Curd- 1/2 cup & Grinded sugar- 3/4 cup
  • Milk- 1/4 cup & Baking powder- 1 teaspoon
  • Baking soda- 1/4 teaspoon & Salt- 1/4 teaspoon
  • Vanilla essence- 1/2 tsp & Honey- 1 tbsp + Water- 1 tbsp
  • Mixed fruit jam- 5 tbsp & Water- 2 tbsp

Directions

 

  • Separately, mix the wet ingredients and dry ingredients of the cake separately and combine them together to prepare the cake batter. Preheat the oven in convection mode to 180 degrees C.
  • Transfer the cake batter to a pan lined with brown Oddy Ecobake paper. Bake the cake for 12 minutes in the preheated oven. Meanwhile, prepare the honey syrup by mixing honey and water. 
  • Also, prepare the jam syrup by mixing jam and water in a pan on medium heat. Take the cake from the pan along with the brown Ecobake once it is baked and cooled. 
  • Apply and spread honey syrup and jam syrup on the cake. Roll the cake using the brown Ecobake as shown and pack the cake inside it. Freeze the roll for 1 to 2 hours in the refrigerator.
  • After 2 hours, remove the brown Ecobake, garnish chocolate cream on the cake using a piping bag and cut the cake into small rolls.
