Matar Kachori

About the Recipe

Kachori is a deep-fried spicy snack famous in major parts of the northern states in India. You can add a variety of fillings in the katchori. It is usually made with wheat flour and a spicy stuffing. Here we are making matar katchori which has spices and fresh green peas. Use Oddy Uniwraps brown to keep the fried katchoris. Oddy Uniwraps brown is eco-friendly and reusable.

Ingredients

 

  • Peas 1 bowl
  • Oddy Uniwraps
  • Ghee/ oil 1 tbsp + 1 tbsp
  • Wheat flour 2 cups
  • Salt as required
  • Oats 1 tbsp
  • Green chili
  • Ginger 1 tbsp
  • Coriander 1 tbsp
  • Fennel seeds 1 tbsp
  • For tempering: Oil 2 tbsp, cumin seeds ½ tsp, Asafoetida 1 pinch, Kalonji 1 tsp,Gram flour 2 tbsp
  • Seasoning ingredients: Coriander powder 1 tbsp, cumin powder ½ tsp, turmeric powder ½ tsp, chili powder ½ tsp, asafoetida 1 pinch, garam masala 1 tsp, amchur powder ½ tsp, common Salt ½ tsp, salt 1 tsp, powdered sugar ½ tsp, pink salt ½ tsp, Oil

Directions

 

  • In a pan, add 1 tsp of ghee and roast our peas in medium flame for 1 minute. In a dish sieve wheat flour, add salt, oil, crushed carrom seeds, and mix well. Add water and mix into dough. Cover the dough with a wet cloth and let it rest for 15-20 mins.
  • Add the peas in a mixer. Add chilies, ginger and grind into a coarse paste. In motor and pestle add coriander seeds, fennel seeds and carrom seeds and crush in into a coarse powder.
  • In a pan add oil, add cumin seeds, asafoetida, crushed whole spices, roast for a minute. Add kalonji, roast and add gram flour and mix well. Add green peas mixture. Cook for 4-5 mins. In a bowl add coriander powder, cumin powder, turmeric powder, chilli powder, asafoetida, garam masala, amchur powder, pink salt, salt and mix well.
  • Add this powder masala in our peas mixture and mix well. Cook for 2 minutes by keep on stirring. Let the mixture cool completely. Add powdered sugar and mix well. Sprinkle some water and give a final mix.
  • In a kadai add oil and let in heat nicely. Take the dough make small balls as we do for chapati. Make it into a cup shape and add the matar filling in it. Make it into a modak shape. And flatten it up. Flatten it and roll it with a rolling pin. Deep fry in hot oil. Flip on both sides and and cook nicely. You can also shallow fry with a little oil.

  • You can add chopped onions and sev, top with with green chutney, curd, and sauce and have it like a chaat.
