Mouthwatering Kaju Pista Roll

Today we are going to make a bakery-style Kaju Pista roll, which is way healthier than the ones that are made there. We can also make these Kaju Pista rolls at half the price as we buy them in the shops. Ecobake helps in rolling and flattening the dough to give it a perfect shape with no need for additional cleanup.

Ingredients

 

  • Cashewnuts- 500 gm & Sugar- Less than 2 cups ( 400 gm )
  • Pista - 50 gm, Silverwork & Water - 1.25 cups
  • Saffron & Green cardamom-4-5

Directions

 

  • Freeze cashewnuts for 2 hours in the refrigerator. Soak the pistas for 30 minutes in hot water and dry them. Chop pistachios using a knife and grind cashews into a fine powder in a mixer jar. Prepare sugar syrup by melting sugar in water with a few saffron strands until one string consistency is achieved. Roast cashew powder in a pan until it turns aromatic.
  • Add sugar syrup to the cashew powder and mix well to form a thick paste. Cook it until you shape a small portion of the paste into a round ball as shown. Transfer the cashew paste onto a piece of Ecobake parchment paper and allow it to cool for a while.
  • Meanwhile, make the filling by combining some of the cashew paste with chopped pista and crumbled cardamom. After a while, flatten and spread the cashew paste with your hands. Make the pista filling into a roll and place it on the kaju base.
  • Seal the filling with a kaju layer and roll it tightly with Ecobake parchment paper. Allow it to set properly at room temperature or in the fridge. After 1 hour, cut the kaju pista roll into small pieces and enjoy your kaju pista sweet.
