Nachni Nashta

About the Recipe

Finger millet, or Ragi, is called “nachni” in Hindi. It is a healthy cereal with many health benefits and much nutritional value. Make this nachni nashtta from ragi flour and vegetables for your breakfast. You can make a healthier version by steaming the batter using Oddy Ecobake to have an oil-free breakfast. The nashtta is precisely steamed, non-sticky, and incredibly simple to clean even though no oil is used because Oddy Ecobake provides the essential greasing.

Ingredients

 

  • Ragi or finger millet atta-1/2 cup & Semolina-1/2 cup
  • Besan-2 tbsp & Sour curd-3/4 cup
  • Grated Carrots-1/4 cup & Shredded Cabbage-1/3 cup
  • Chopped Capsicum-1/4 cup & Coriander leaves-1/4 cup
  • Sweet corn -2 tbsp & Boiled green peas-2 tbsp
  • Ginger chilli paste-1 tbsp & Salt-to taste
  • Lemon juce-1 tsp & Eno-as required
  • Oddy Ecobake

Directions

 

  • Take ragi flour, semolina, besan, curd, and water in a mixing bowl and mix them together. Add some more water to it to make a smooth batter.
  • Cover and let it rest for 10 minutes. Add all the vegetables, coriander leaves, ginger chili paste, salt, and lime juice to the batter and mix well. Add water if the batter is thick.
  • Add eno to a portion of batter and mix well. Add a spoonful of oil to a pan and sprinkle sesame seeds on it, then pour the batter into it and spread well.
  • Cover and cook for 3 minutes. Flip the other side and cook for 2 minutes. The nachni nashtta is ready. Garnish with grated cheese, chilli flakes, and coriander leaves if you wish. Serve it with tomato ketchup, mayonnaise and green chutney.
  • To make a healthier, oil-free version, take a portion of batter and mix it with eno. Line a baking pan with Oddy Ecobake. Pour the batter into it and spread it well. Cover and steam it for 15 minutes.
  • After it is steamed completely, cool and cut it into pieces. Add seasoning to it and garnish with coriander leaves. Serve it with green chutney. The healthier version of nachni nashtta is ready.
