Ingredients

  • Milk - 1/2 cup + 3 tbsp & Vinegar - 1.5 tbsp
  • Oil - 1/4 cup & Vanilla essence - 1/2 tsp
  • Instant coffee powder - 1 tsp & Hot water - 1 tbsp
  • Sugar - 1/2 cup + 2 tbsp & Maida - 1 cup
  • Whipped cream - 1.25 cup & Baking soda - 1/4 tsp + 2 pinches
  • Cocoa powder - 3 tbsp & Baking powder - 1 tsp
  • Dark chocolate - 130 gm & Milk - 1/4 cup
  • Green gel food color - few drops & Oddy Ecobake
  • Sugar syrup and Golden sugar balls

Directions

  • Prepare buttermilk by mixing milk and vinegar. Add the wet ingredients to the prepared buttermilk and mix well. Sieve the dry ingredients into the same bowl and mix well to prepare the cake batter. Add 2 tbsp of milk to adjust the consistency of the batter.
  • Transfer the cake batter to a cake mould lined with Oddy Ecobake. Bake the cake for 45 minutes in a preheated kadai. Once the cake is baked and cooled, trim the top of the cake and divide it into three equal parts.
  • Prepare chocolate ganache by melting dark chocolate with milk. Beat whipped cream in a bowl until stiff peaks are formed. Add half of the prepared ganache to the whipped cream and beat again to make chocolate frosting.
  • Place the first layer of the cake, soak it with sugar syrup, and apply whipped cream to it. Sprinkle grated dark chocolate over the whipped cream, and place another cake layer on it. Repeat the same process for the remaining cake layers.
  • Crumb-coat the cake and then frost the cake completely with the remaining whipped cream. Divide the remaining frosting into three bowls and add chocolate ganache in different proportions to make three different shades of brown.
  • With the help of a star nozzle, decorate the cake with all three shades of chocolate brown, with the lighter shade at the top and the darker shade at the bottom. Make a flower design in the centre of the cake with whipped cream.
  • Using a piping bag, create a leaf pattern in addition to the white flowers. Garnish the cake with golden sugar balls as shown. Your beautiful chocolate cake with an ombre effect is ready!
