Plum Cake For Christmas

Plum cake is a cake made either with dried fruit such as cashews, raisins, prunes, tutti-frutti, or even with fresh fruits. Plums are rich in various nutrients, which make plum cakes a healthy food choice despite being a dessert. Make this plum cake for next Christmas. This cake is made on the stove by lining the baking pan with Oddy Ecobake, which is very convenient and safe to use to bake a cake that comes off easily from it.

Ingredients

 

  • Dry fruits and nuts-50 g, Baking powder-1 tsp, Baking soda-1/4 tsp
  • Refined flour-1 cup (150 gm), Sugar-1/3 cup (75gm), Cranberry Juice or any juice- 1 cup
  • Milk-1/2 cup + 1 tbsp, Cinnamon-1 small piece, Cloves-3-4 piece
  • Black pepper-10-12 pieces, Dry ginger powder-1/4 tsp
  • Nutmeg powder-2 pinch, Butter (salted) - 5-6 tbsp (75 gm)
  • Oddy Ecobake

Directions

 

  • Soak dry fruits and nuts in cranberry juice for 5 to 6 hours. Caramelize sugar in a pan, add water to it to avoid caramelizing further, and let it boil. Let it cool completely.
  • Crush pepper, cinnamon, and cloves into a fine dry spice powder. Add the sifted flour, dry ginger powder, nutmeg powder, and dry spice powder into a bowl and mix well.
  • Mix the milk, butter, and vanilla extract in another bowl, then add the dry ingredients to it along with the sugar syrup. Then add the soaked nuts and fruits to it and whisk well.
  • Lastly, add baking soda, baking powder, and milk to it and mix by the cut-and-fold method. Garnish with some more nuts and dry fruits.
  • Line a baking pan with Oddy Ecobake. Transfer the batter into it, tap it, and spread it well. Preheat a kadhai with a wire stand in it. Cover and bake the cake for 50–60 minutes on a medium flame.
  • Check with a toothpick if it's completely baked: A clean toothpick means a perfectly baked cake. Cover with a cloth and let it rest for 10 to 15 minutes, then cool completely.
  • Tap the bottom of the baking pan and demold. The plum cake is ready. Cut into slices.
