Fruit Muffins Without Eggs and an Oven

About the Recipe

Try these yummy and healthy fruit muffins for your teatime snacks. It can be made without eggs and in less time. Oddy Ecobake is used to make DIY cupcake molds. It also aids in the easy demolding of the cupcakes.

Ingredients

 

  • Butter - 50gm & Brown Sugar (Powder) - 1 Cup
  • Veg Oil - 1/4 Cup(50 ml) & Curd - 1/4 Cup (50 gm)
  • Caramel Syrup - 2 Tbsp & Vanilla Essesnce - 2 Tsp
  • All Purpose Flour - 1.5 Cup & Baking Powder - 1 Tsp
  • Baking Soda - 1/2 Tsp & Christmas Spices - 1 Tsp
  • Christmas Fruit Mix - 1 Cup Milk - 1/4 Cup & Nuts - 1/4 Cup
  • Christmas Spices - 1/2 Tsp & Oddy Ecobake

Directions

 

  • Beat the butter and brown sugar in a mixing bowl well. Add vegetable oil, curd, caramel syrup, and vanilla essence and mix well.
  • Sieve the dry ingredients, like all-purpose flour, baking powder, baking soda, and Christmas spices, into the wet ingredients.
  • Cut and fold the ingredients together. Add the Christmas Fruit Mix to the batter and fold it gently. Add milk to adjust the consistency of the batter.
  • Add nuts and Christmas spices to it and mix well. The cake batter is ready. Fill a bowl with Oddy EcoBake and use it as a DIY cupcake liner.
  • Pour about two-thirds of the batter. Add some dry fruits. Preheat a kadai on low heat for 10 minutes. Bake the cupcakes for 30 minutes on low heat.
  • In the meantime, put the water for boil for placing the dhokla batter for steaming. Now pour the batter in the tray and pat the base to settle the batter equally. Sprinkle little red chilli powder on the batter.
  • Check the cupcakes after 30 minutes with a knife or toothpick. If it comes out clean, your cupcakes are ready. Enjoy them with hot tea.
