Plum Cake With Milk and Milk Powder

Make this plum cake for Christmas with milk and milk powder that is loaded with dry fruits and nuts like raisins, cashews, almonds, and walnuts. It is an eggless recipe made on the stove. The use of Oddy Ecobake, which saves your baking time and also reduces your cleaning effort, makes demoulding the cake hassle-free.

Ingredients

 

  • Oranges-3, Orange Juice- 1 cup, Dry fruits and nuts-50 g
  • Baking powder-1 tsp, Baking soda-1/2 tsp, Refined flour-1 cup
  • Sugar-2/3 cup, Milk-1/4 cup , Refined oil-1/4 cup
  • Vanilla essence-1/4 tsp, Milk powder- 3 tsp, Salt- a pinch
  • Oddy Ecobake.

Directions

 

  • Extract orange juice into a bowl from oranges in a strainer. Soak dry fruits and nuts in orange juice for 3 to 4 hours.
  • Caramelize sugar in a pan, add water to it to avoid caramelizing further, and let it boil for 5 minutes. Let it cool completely.
  • Mix the milk, oil, and vanilla extract in another bowl, then add the sifted dry ingredients to it along with the sugar syrup gradually. Then add the soaked nuts and fruits to it and whisk well.
  • Lastly, add the sifted baking soda, baking powder, and salt to it and mix using the cut-and-fold method.
  • Cover and preheat a kadhai with a wire stand in it. Line a baking pan with Oddy Ecobake. Transfer the batter into it immediately, tap it, and spread it well.
  • Cover and bake the cake for 40–50 minutes on a medium flame. Garnish with some more nuts and dry fruits after the first 20 minutes.
  • Check with a toothpick if it's completely baked: A clean toothpick means a perfectly baked cake. Cool completely and demold. Cut into slices.
