Puran Poli with Katachi amati

The classic way of having Puran poli is with amati. Try making amati and Puran poli, by following my step-by-step method. Add equal quantity of chana and jaggery to get the perfect sweetness. You can either make katachi amti or add a few more ingredients to make the normal amti. I have shown both the methods here. Use Oddy Uniwraps to keep the fried puran polis. Ingredients

 

  • Chana dal 400 grms
  • Wheat flour 3 cups
  • Salt as required
  • Oil 2 tbsp
  • Turmeric 1/4th tsp
  • Water
  • Jaggery 1 ½ cup
  • Dry ginger powder 1/4th tsp
  • Fennel seeds ½ tsp
  • Nutmeg 1 pinch
  • Cardamom powder 1 tbsp
  • Onion 1 sliced
  • Grated coconut 4 tbsp
  • Garlic 10-12 peeled
  • Curry leaves 4-5
  • Ginger 1 inch
  • Coriander powder 1 tsp
  • Turmeric ½ tsp
  • Chilli powder 1 tsp
  • Coriander leaves chopped
  • Mustard 1 tsp
  • Cumin 1 tsp
  • asefodita 1 pinch
  • curry leaves 4-5

Directions

 

  • Wash chana dal and soak for 20 mins it. Cook the dal in a cooker for 15-20 mins in a medium flame. In a bowl add wheat flour, salt, turmeric, oil and water to form a smooth dough as we do for chapati. Close the dough with a lid and let it rest for 20 mins.
  • Check the cooked chana dal. Drain the cooked dal water in a bowl as we need it for the amati. Remove same dal for amati. In a kadai add the chana dal and fry to remove the excess water. Add jaggery and mix well. Add dry ginger powder, fennel seeds, nutmeg and cardamom powder and mix well.
  • For amati, in a kadai add oil fry onions till golden brown and remove the onions. Add grated coconut and fry till brown. Add garlic and mix well. Switch of the flame and add curry leaves, ginger and mix well. Add onions and coriander powder, turmeric, chilli powder, coriander leaves and mix well.
  • Grind the mixture. In a kadai add oil, add mustard, cumin, asefodita and curry leaves, mix well. Add the ground paste, the chana dal water and mix well. Add a few chana dal and chopped coriander and mix well.
  • Add salt and let it boil for 7-8 minutes. You can stop here if you want katachi amati and if you want normal amati then you can further add cooked chana dal in mixer, make into a fine paste and mix with some water. Add this dal mixture in amati and cook well for 7 mins. Our amati is ready.
  • Take the puran filling and either you can sieve it to form a fine mixture or you can grind it in a mixer. Make the dough into a bowl shape and add the filling. Roll it into a thick paratha with a rolling pin. Cook it in hot tava on both sides by adding ghee in it.
