Sandesh

About the Recipe

Sandesh is a delicious Bengali sweet that is popular in India. It is made for festivals and special occasions, most importantly for Durga Puja during Navarathri. It is made by curdling milk and draining the whey to collect chenna, which is then kneaded to make a smooth texture and then cooked on a low flame with powdered sugar. The sandesh is made into perfect shapes by using Oddy Ecobake, which provides the necessary grease to cut them into the perfect shape as desired.

Ingredients

 

  • Full cream milk-1.5 liter & Synthetic vinegar + water-1/4 cup
  • Chenna or Paneer-1 cup & Powdered sugar-1/2 cup
  • Corn flour-1 tsp & Cardamom powder- 1 pinch
  • Chopped Pistachios
  • Oddy Ecobake

Directions

 

  • Boil milk in a pan, then add vinegar and water to it and stir well. Strain it and remove whey water.
  • Let it rest for 1 to 2 hours. The chenna is ready. Take a cup of chenna and knead it well.
  • Now add powdered sugar, corn flour to it and mix well. Heat in a pan for 10-12 minutes on a low flame until it leaves the pan.
  • Then add a pinch of cardamom powder to it and mix well. Roll into a small ball and check for consistency.
  • The mixture is ready if you can it roll into a ball easily. Line a baking tray with Oddy Ecobake. Transfer the mixture into it. Spread well.
  • Cut the mixture into small squares. Grease a mould with ghee, take mixture and make the sandesh into desired shape. Garnish with chopped pistachios.
